Developing Spice List

I am working out a fairly large 'must have' spice list. We have more than a hundred containers of spice here, but I only have about 60 spaces to keep them in the kitchen. The rest will have to be stored away from the action.

I am curious to know what other people normally use. I looked on line at various 'must have' lists and they were all over the place. At least two lists of less than fifteen 'essential' spices had things like 'Apple pie spice' -- too dumb to even put on this long list.

Here is a list of one hundred and eleven spices, some of which we have here.  The other lists consulted did not contain some of them. Some were available at places like Bulk Barn or otherwise mentioned, but not on the lists. The list is in the order of number of lists containing the spice. I consulted twenty-one lists. The purpose of the list is to help me determine which of the spices get to occupy the 60 or so spots I have where they can be near at hand. The fact that different types of cuisine demand their own mix of spices makes this a bit complicated. It is also confounded by the fact that people have their own favorite sets of dishes and use spice mixtures often enough to keep them as mixtures. We use Jerk, Garam Masala, Montreal Steak spice, Chicken spice mixes, and Vegetable spice mixes, etc -- enough that they are on the list because I need to make sure they have a home in our kitchen :)

I also have a rocking Singapore noodle spice blend I make as well as a Pizza spice. I make them up in advance because they involve so many different ingredients they take a while to assemble. The Pizza spice has more than a dozen!

Yorkshire Pudding

My recipe for Yorkshire Pudding (updated). What I like about this recipe is that you use exactly equal volume measurements of eggs, flour, and milk: Ingredients: Eggs (straight from the fridge is fine) All-purpose flour Milk Salt (1/4 tsp per egg) Vegetable oil (1/2 tsp per muffin cup) Instructions: Preheat the Oven: Set your oven to 425 degrees Fahrenheit (220 degrees Celsius). Prepare the Muffin Pan: Add 1/2 teaspoon of oil to each cup of a muffin pan. Use three cups for each egg in your recipe. Place the pan in the oven to heat the oil. Coffee Cake

Ingredients Cake 1 cup flour 1/2 cup sugar 1 tbsp baking powder 1 tsp cinnamon 1/2 cup milk 1 egg 1/4 cup butter Topping 3 tbsp sugar 1 1/2 tsp cinnamon 3 tbsp flour 1 1/2 tbsp butter 1/4 cup chopped pecans (optional) Directions Preheat oven to 450 degrees Butter a 9x12 casserole dish Melt the 1/4 cup of butter and the 1 1/2 tbsp of butter Cake Batter Sift together 1 cup flour, 1/2 cup sugar, 1 tbsp baking powder, 1 tsp cinnamon (all the dry cake ingredients) into bowl, then sift again into a second bowl.  In the empty bowl, beat the egg Mix in the 1/2 cup milk Pour liquid into bowl with dry ingredients and mix Add 1/4 butter Gently mix batter until just smooth Pour batter into casserole dish Topping Mix all the topping ingredients together -- 3 tbsp sugar, 1 1/2 tsp cinnamon, 3 tbsp flour, 1 1/2 tbsp butter, 1/4 cup chopped pecans Sprinkle topping on top of cake batter Baking Bake at 450 degrees for about 10-18 minutes until a toothp

Alfredo's Noodles

This recipe is usually done as ' Fettuccine Alfredo ', but I prefer linguine when I have a choice. In the picture here, it is done with De Cecco spaghetti. This recipe makes four appetizer/first course sized portions. To make a meal of it, add Caesar Salad and garlic bread. Ingredients 1/2 lb noodles (best with linguine) 1/4 lb salted butter 1 cup heavy (35%) cream 2 cups freshly grated Parmigiano-Reggiano 1/4 tsp freshly ground black pepper Directions Fill a 2 quart bowl with very hot water and set aside Cook noodles according to directions (see notes) While noodles are cooking, melt the butter and warm the cream Empty bowl, drain the noodles and place in the warm bowl. Add cream, butter, pepper and 1 1/2 cups of the parmesan and toss to coat the noodles.  Serve quickly Use remaining half-cup of parmesan to top the served noodles.
