Broccoli Beef

Ingredients 

For the Beef:

  • 1 lb flank steak or sirloin, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch

For the Sauce:

  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 cups broccoli florets
  • 1 small onion, sliced

Instructions

  1. Marinate the Beef:

    • Toss the sliced beef with 1 tbsp. soy sauce and 1 tbsp. cornstarch. Let sit for 15 minutes.
  2. Prepare the Sauce:

    • In a bowl, mix 1/2 cup beef broth, 1/4 cup soy sauce, 2 tbsp. oyster sauce, 2 tbsp. brown sugar, and 1 tbsp. cornstarch. Set aside.
  3. Stir-Fry:

    • Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Stir-fry beef until browned and set aside.
    • Add the remaining 1 tbsp. oil, then stir-fry 3 cloves minced garlic, 1 tbsp grated ginger, and small sliced onion until fragrant.
    • Add broccoli and stir-fry until tender-crisp. (Note: I usually slightly soften the broccoli in the microwave first to make sure it is tender enough. 
  4. Combine and Serve:

    • Return beef to the pan and pour in the sauce. Stir until everything is well coated and the sauce thickens.
    • Serve hot with rice.

Yorkshire Pudding

My recipe for Yorkshire Pudding (updated). What I like about this recipe is that you use exactly equal volume measurements of eggs, flour, and milk: Ingredients: Eggs (straight from the fridge is fine) All-purpose flour Milk Salt (1/4 tsp per egg) Vegetable oil (1/2 tsp per muffin cup) Instructions: Preheat the Oven: Set your oven to 425 degrees Fahrenheit (220 degrees Celsius). Prepare the Muffin Pan: Add 1/2 teaspoon of oil to each cup of a muffin pan. Use three cups for each egg in your recipe. Place the pan in the oven to heat the oil. Heat for at least 5 minutes, or until the oil is hot -- hot enough so that it bubbles when you put the batter in the cups.  Make the Batter: In a bowl, mix eggs, flour, and milk in equal quantities to create a batter with a consistency similar to pancake batter.
