Deep Dish Pizza, Pizza Bread


Ingredients

Crust

1 1/2 tbsp Milk Powder
1 1/2 tsp Sugar
 . 3/4 tsp Yeast
 . 1/4 tsp Salt
 . 1/2 Cup Water

 . 1/2 tbsp Oil

1 1/2 Cup Flour

3 1/2 tbsp Oil2

Sauce -- Spice

2 tsp Oregano
1 tsp Thyme
1 tsp Basil
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Marjoram
1 tsp Sugar
1/2 tsp Black Pepper
1/4 tsp Cayenne pepper


1/4 tsp Salt

Use 1 tbsp spice per cup of tomato sauce.

Directions

Make sauce ahead of time, ideally at least 1 hour before using. This recipe should use about 1/2 cup. 

To a medium bowl, add 1 1/2 tbsp Milk Powder, 1 1/2 tsp Sugar, 3/4 tsp Yeast and 1/4 tsp Salt and stir briefly to mix. Add 1/2 cup water and stir until mixed. Allow yeast to activate for about 5 minutes. Stir in 1/2 tbsp Oil and then add 1 1/2 cups of flour, 1/2 cup at a time. For the last half cup add flour until dough can be formed but is not too dry. 

Preparing the crust

Knead the dough for about 6-10 minutes until it is smooth. Use a rolling pin to roll it into a sheet that fits the pan you are going to use. This recipe is intended for a pan about 10"x12"

Once the dough is rolled out, spread 3 to 4 tbsp (up to a quarter cup) of oil to cover the bottom of the pan. Place the dough on top and adjust the dough to fill the pan.

Rise

Slightly warm your oven by setting it to 350 degrees for one minute. [Turn it off after a minute. It is just to make a warm place for the dough to rise.] Place the pan in the middle of the rack, close the oven and let it rise for approximately 30 to 60 minutes.

Once the dough is risen, take it out of the oven and preheat the oven to 475 degrees. 

Topping the Pizza

Spread enough pizza sauce on the pizza to cover. 

Top the Pizza with about 1/4 pound of cheese (we use a mixture of about 3 parts Mozzarella to one part Cheddar and add a small amount of Parmesan)

Add other toppings as desired. 

Baking

Bake at 475 for 12-16 minutes until top is bubbling and crust is browned. 

Slicing/Storing

Slice Pizza into wedges or squares depending on the pan used. You can store unused portions in the fridge for a day or so. This pizza freezes well.

Notes

The dough can be used alone to make an amusing bread product sort of like a flatter focaccia.
